Nash's own variety of CERTIFIED ORGANIC multicolored sweet kale is beautiful and delicious raw in salads, added to sautees, soups and stir-frys.
***Kale and Triticale "Risotto" from Chef Mike Shethar***
One Package (12 oz) Triticale
2 bunches Lacinato (Tuscan) or Red Kale leaves, with ribs and stems removed
2 T Extra Virgin olive oil
2 Med Shallots, sliced
3 Cloves garlic, sliced
5 C Veggie broth
1.5 T Butter
6 oz Parmesan Cheese
2 tablespoons chopped fresh chives
Wash and soak Triticale overnight. Cook as you would rice, (1 part grain, 1.5 part water) for around 1-2 hours, or until tender and translucent. Drain and coat with a bit of olive oil. Coarsely chop kale to edible portion size (around 2 inch squares) and reserve. Heat oil, on medium heat, in a large saucepan, and add shallots. Cook about 2 minutes or until very fragrant and soft. Add kale, saute and wilt for about 2 minutes, then add garlic. Saute about 30 seconds, stirring occasionally, then add 4 C of the broth and simmer. Simmer about 10 minutes or until broth is mostly absorbed, then add butter, 4 oz Parmesan Cheese and cooked Triticale. Adjust consistency with remaining stock and perhaps sneak in more butter, and season with salt, pepper. Garnish with chives and Parmesan cheese.

The spaghetti squash looks great and is delicious with your favorite tomato sauce. Here are some cooking tips:
By the slice: slice 2 to 3 inches thick, remove seeds, and place on plate in toaster oven or on cookie sheet in regular oven. Cook about 15 to 25 minutes, at 350 to 375, or until noodle like insides scrape easily with a fork. Do not over cook.
To cook whole, poke 6 holes all the way through to center of squash. Bake at 350 to 375 until it tests soft with a two pronged fork (about 45 to 60 minutes depending on size). Cut in half, scoop out seeds, and mix in butter, garlic and chopped parsley with hot squash and serve.

RECIPE:Brussels Sprouts with Pancetta and Garlic
Ingredients:
• 1 pound Brussels sprouts
• 2 ounces pancetta, thinly sliced*
• 2 cloves garlic, minced
• 1 tablespoon balsamic vinegar
• 1/2 tablespoon olive oil
• Sea salt and ground pepper to taste
• 1 tablespoon water
*Pancetta can be substituted with prosciutto or
bacon.
Directions:
1. Preheat oven to 450 ° F. Halve your Brussels sprouts
lengthwise.
2. Toss together Brussels sprouts, pancetta, garlic,
balsamic vinegar and olive oil.
3. Oil an 11 by 17 inch baking pan, and then spread
mixture into 1 layer.
4. Roast in upper third of the oven (stirring once halfway
through) until sprouts are tender and brown around
the edges (about 25 minutes). Stir in water, toss and
then serve warm.
Serves 4
